Lemon Popsicles
INGREDIENTS
Lemon juice 120 ml
Water 60 ml
Caster sugar 30 g
Lemon zest 1
Mint 10 leaves
Step01
To make lemon popsicles, start by making
the syrup with water and sugar. Put the water and sugar in a saucepan and turn
on the heat. Mix well. When the mix comes to a boil, cook for 4-5 minutes,
stirring constantly. Then cool the syrup obtained.
Step02
Wash the lemons well, dry them and press
them gently with the palms of your hands. This will make it easier to extract
the juice.
Step03
Zest the lemon with a microplane or a
fine-mesh grater, and set it aside.
Step04
Now squeeze the lemon juice. If you prefer,
you can filter the juice with a narrow mesh strainer.
Step05
Add the syrup to the lemon juice and mix
well. Also, add the previously grated lemon zest.
Step06
Pour the mixture into the moulds and fix
the sticks. Place the moulds in the freezer and let them cool for at least 4
hours, when your lemon popsicles will be ready to serve.
