Boursin-Stuffed Mushrooms
Ingredients
2 tbsp. unsalted butter
20 button mushrooms, stems chopped, caps reserved
1/2 yellow onion, finely chopped
2 cloves garlic, minced
1 tbsp. finely chopped fresh parsley, plus more
for sprinkling
1 (5.2-oz.) block Boursin
1/2 c. bread crumbs, plus more for sprinkling
1/2 c. grated Parmesan
Kosher salt
Freshly ground black pepper
Extra-virgin olive oil, for drizzling
Directions
Step 1 Preheat oven to 350°. In a large skillet over
medium-high heat, melt butter. Cook mushroom stems, onion, garlic, and parsley,
stirring occasionally, until onions are softened, 5 to 7 minutes.
Step 2 In a medium bowl, mix Boursin, bread crumbs,
Parmesan, and onion mixture; season with salt and pepper.
Step 3 Stuff mushroom caps with Boursin mixture.
Sprinkle with more bread crumbs and drizzle with oil. Top with parsley.
Step 4 Bake mushrooms until deeply golden and cooked
through, about 20 minutes.
