Air fryer cheese latkes
4 (800g) sebago (or other floury) potatoes
125g piece mozzarella
1/2 small brown onion, very finely chopped
40g (1/2 cup) grated cheddar cheese
Select all ingredients
Step 1
Peel potatoes and cut in half
crossways. Place in a saucepan and cover with cold water. Cover pan with a lid
and bring to the boil over high heat. Uncover and cook for 5 minutes. Drain and
transfer to a board until cool enough to handle.
Step 2
Cut the mozzarella into 3.5cm-square
pieces (they should be about 1cm thick). Coarsely grate the potato and spread
into a large wide bowl. Sprinkle with the onion and cheddar
cheese, and season. Use a spatula, then your hands, to mix until evenly
combined.

Half-fill a ¼ cup (60ml) measuring cup with
the mixture. Lay a piece of mozzarella in the centre, then fill with more
mixture, compacting firmly. Turn out onto a chopping board. Repeat with
remaining mixture and mozzarella to make 12 in total.
Step 4
Preheat air fryer on 180C for 5 minutes. Use
your fingers to gently press 4 of the latkes, flattening them slightly, to form
8cm rounds. Spray tops with oil, then carefully turn and spray the other side.
Place in the air fryer and cook for 6 minutes. Turn and cook for a further 6
minutes or until golden and crispy around the edges.
Step 5
Repeat with remaining latkes, cooking in
batches. Season with salt and serve.
