Jumbo chilli con carne burritos
Ingredients (13)
220g (1 cup) medium-grain white rice
1 tbsp vegetable oil
1 red onion, finely chopped
500g pkt Coles Regular Australian Beef
Mince
40g pkt Coles Mild Mexican Seasoning Mix
2 tbsp Coles Simply Tomato Paste
420g can black beans, rinsed, drained
75g (1/2 cup) frozen corn
4 jumbo flour tortillas
85g (1/3 cup) sour cream
80g (1 cup) coarsely grated Coles Cheddar
Cheese
1 tomato, finely chopped
Fresh coriander leaves, to serve
Method
Step 1
Cook rice using the absorption
method following packet directions.
Step 2
Meanwhile, heat the oil in a
large frying pan over medium-high heat. Cook the onion, stirring, for 5
minutes or until begins to soften. Add the beef, breaking up lumps with a
wooden spoon, for 5 minutes or until browned.
Step 3
Add seasoning mix to the pan and
stir to combine. Stir in the tomato paste. Cook for 30 seconds, then stir
in the beans, corn and 185ml (3/4 cup) water. Season. Cook,
stirring occasionally and pressing on beans to break up some (leave some beans
whole), for 6-8 minutes or until mixture is thickened and mince is cooked
through.
Step 4
Heat tortillas following packet
directions. Spoon rice and beef mixture along the centre of each tortilla. Top
with a dollop of sour cream. Sprinkle with cheese, tomato and coriander.
Roll up tortillas, folding in 1 end, to enclose filling. Serve.
