Cranberry Chicken Salad
Ingredients
3 cups chopped rotisserie chicken (from 1
rotisserie chicken)
1/2 cup chopped celery (from 2 stalks)
1/3 cup dried cranberries
2 Tbsp. sweet pickle relish
2 Tbsp. chopped fresh chives, plus more for
garnish
2 Tbsp. chopped fresh flat-leaf parsley
1 1/2 tsp. Dijon mustard
1/2 cup mayonnaise
1/2 tsp. kosher salt
1/4 tsp. black pepper
Directions
Combine ingredients:
Stir together all ingredients in a large bowl until well
incorporated. Garnish with additional chives, if desired.

Serve or chill:
Serve immediately or, for best results, chill, covered, at
least 2 hours or up to 24 hours before serving.
