Bay roasted smashed potatoes
Ingredients (3)
1 kg small waxy potatoes, such as Coliban
120ml extra virgin olive oil
6 fresh bay leaves, torn
Method
Step 1
Preheat oven to 220C/200C fan forced. Line a roasting pan
with baking paper. Season the potato and place in prepared pan. Add 1 tbs of
the oil. Stir well to coat. Roast for 30 minutes.
Step 2
Remove pan from the oven and use a potato masher to squash
the potatoes until ‘smashed’. Add the bay leaves and remaining oil to the pan.
Stir well and season again with salt and pepper. Return to the oven for a
further 20 minutes or until the potatoes are crisp and golden. Transfer to a
serving platter.
