Apple Pie Bars

Ingredients

Streusel Topping:

3/4 cup all-purpose flour

1/2 cup packed light brown sugar

1/4 tsp. ground cinnamon

1/4 tsp. kosher salt

4 Tbsp. unsalted butter, cubed and softened

Crust:

Cooking spray

1 cup all-purpose flour

1/4 cup brown sugar

1/2 tsp. kosher salt

1/2 cup unsalted butter, cubed and softened

Filling:

3 large (8 oz. each) apples (such as Golden Delicious, Granny Smith, and Honeycrisp) peeled and thinly sliced (about 8 cups)

2 tsp. apple cider vinegar

1 tsp. vanilla extract

2 Tbsp. granulated sugar

2 Tbsp. all-purpose flour

1 tsp. apple pie spice

Pinch kosher salt

Directions

Prepare oven and baking pan:

Preheat oven to 350°F with rack in center position. Coat a 9-inch square baking pan with cooking spray; line bottom and sides with parchment paper, leaving a 1-inch overhang on all sides.

Prepare Streusel Topping:

Whisk together flour, brown sugar, cinnamon, and salt in a small mixing bowl. Using a pastry cutter or 2 forks, cut in butter until mixture resembles coarse crumbs, about 2 minutes. (The mixture should resemble wet sand with small pebbles.) Cover and transfer to freezer until needed.

Prepare the Crust:

Whisk flour, brown sugar, and salt together in a medium mixing bowl. Add butter and cut into the flour mixture until butter is cully combined and a shaggy dough forms.

Press dough evenly into bottom and about 1/4 inch up sides of prepared pan.

Bake Crust:

Bake in preheated oven for 15-18 minutes, or until crust is lightly browned. Let cool in pan on a wire rack until needed.

Meanwhile, make the Filling:

Toss apple slices, vinegar, and vanilla together in a large mixing bowl until combined.

Add the sugar, flour, apple pie spice, and salt; toss well to coat evenly.

Top Crust with Filling:

Spread the Apple Filling evenly over prepared Crust; press into a flat, compact layer.

Add Topping to Filling and bake:

Sprinkle Streusel Topping evenly over Apple Filling.

Bake in preheated oven until Streusel Topping is golden brown and apples are tender when pierced with a fork, about 1 hour. Remove from oven and let cool completely on a wire rack, about 1 1/2 hours. Remove from pan using parchment overhang as handles; place on a cutting board or platter, and cut into 12 (3- x 2 1/4-inch) bars.
