Tom Kha Kai
750 ml. vegetable stock
750 ml. coconut milk
1 large piece of galangal or ginger
1 onion
2 lemongrass
200 grams of mushrooms
7 lime leaves
4 spicy peppers
200 grams of cleaned shrimp
brown sugar
soy sauce
Coriander
First, reduce it in a concentrated way by boiling the
vegetable broth.
In the meantime, chop the onion and galangal into small
slices and put them in the water.
Crush the lemongrass in a mortar. Set the pot to medium
heat.
Add lime leaves, coconut milk and lemongrass to it.
When the water starts to boil, drain the lime leaves and
lemongrass.
Then add the sliced onions and mushrooms and cook for 10
minutes.
Add shrimp and hot pepper to the boiling water and cook for
another 5 minutes.
Divide the soup you prepared on the serving plates. Serve
with lime, soy sauce, coriander juice and sugar on top.
Tom kha kai soup is served with rice pilaf. Enjoy your meal.
