Chicken Broccoli Stuffed Peppers
Ingredients
3 bell peppers, tops and seeds removed, halved
lengthwise
1 small head broccoli, cut into florets
2 c. shredded chicken
2 c. cooked white rice
1 1/2 c. shredded white cheddar, divided
2 cloves garlic, minced
1/2 tsp. dried oregano
Kosher salt
Freshly ground black pepper
Directions
Step 1 Preheat oven to 350° and grease a medium baking
dish with cooking spray. Place halved peppers cut side up in baking dish.
Step 2 In a large bowl, stir together broccoli,
chicken, rice, 1 cup cheddar, garlic, and oregano, and season with salt and
pepper.
Step 3 Fill each pepper with chicken mixture, then top
with remaining cheese. Fill the bottom of the baking dish with 1/4 cup
water. Cover with foil and bake 20 minutes, then remove foil and bake 8 to
10 minutes more, until peppers are tender and cheese is melted and bubbly.
