Pomegranate and pistachio chicken drumsticks
Ingredients (12)
2 tsp ground cumin
2 tsp ground coriander
2 tsp ground paprika
2 garlic cloves, crushed
1 tbsp red wine vinegar
2 tbsp olive oil
8 Coles Chicken Drumsticks
1 red onion, cut into wedges
1/4 cup (40g) pomegranate seeds
1/4 cup (35g) pistachio, toasted, coarsely
chopped
Greek-style yoghurt, to serve
Coriander leaves, to serve
Method
Step 1
Preheat oven to 200C.
Step 2
Combine the cumin, coriander, paprika, garlic, vinegar and oil in
a large ceramic dish. Add the chicken and toss to coat.
Step 3
Place the chicken in a large baking dish
with the onion. Cook for 40 mins or until the chicken is cooked through.
Step 4
Sprinkle chicken with pomegranate
seeds and pistachio. Serve with the yoghurt and coriander
leaves.
